I am reorganizing My Comfort Kitchen to suit the needs of my family, so HANG ON TIGHT!
We have been very blessed for Jeremy to have recieved a scholarship that eliminates our need for the extra income that My Comfort Kitchen has provided. My children need me, and we have gotten more heavily involved with some ministry here in our community with refugees. This takes time, and the practice of lots of hospitality, flexibility and time away from the home in other family’s homes.
So, a special thank you to all who have been ordering from us, you have been a blessing to our family in a very physical way!
I will continue to cook on a limited basis as my schedule allows, and I will give priority to you, my former customers. Look soon for a list of meals that have been favorites among you all, and prices for them. You can then contact me as you need meals for your family and we can compare calendars and schedule a good time (for both of us). I will most likely have a minimum amount to make it time-effective for me and cost-effective for you. I may cook once a month or more depending on my schedule, and work with you to plan a menu of meals that you can eat right away or pop in the freezer. I may also provide entree options where you would only purchase the main course/entree and freeze it so that you have a meal “starter” that only has to have a salad or side added to it.
I am also available for special occasions and holidays to help with cooking, planning and organizing if you are hosting or entertaining.

No canned tomatoes here – FRESH tomatoes make this a family specialty I’ve modified from one of our favorite little cafes in Old-Town Alexandria in Virginia.

Tomatoes are fast becoming one of our favorite modern foods, and for good reason — they can ward off certain kinds of cancer, prevent macular degeneration and cataracts, and help maintain mental function as we age. Tomatoes contain lycopene, a relatively rare member of the carotenoid family, also found in pink grapefruit and twice as powerful as beta-carotene. Studies have shown that men who eat more tomatoes or tomato sauce have significantly lower rates of prostate cancer. Other studies suggest lycopene can help prevent lung, colon and breast cancers. Tomatoes also contain the antioxidant glutathione, which helps boost immune function. Note: cooked tomatoes are preferable, since heat allows more desirable antioxidants in tomatoes to be made available to the body. And because lycopene is fat-soluble, eating tomatoes with oil can improve absorption.
